Dry the potato well with kitchen paper and place on a microwave-safe plate. Cut in half most of the way through the potato and fluff with a fork (if the potato is not soft re-wrap in the paper towel and microwave for 2 more minutes on each side). Turn over, and continue to cook for 3 more minutes. Split the potatoes open and add the butter. Wash the potato and prick with a sharp knife several times on all sides. Its simply a case of scrubbing your spuds, pricking the skin several times all over and placing it into the microwave for around 4-5 minutes per potato. Cook on full power in the microwave for 3 minutes. Put them in the oven for 10-15 mins or until the skins are starting to crisp. When the potatoes are cool enough to handle, rub the skins all over with the olive oil and sprinkle with the sea salt. Keep cooking in 1-2 min bursts until they feel soft all the way through and the skins are wrinkled. Re-cover with the kitchen roll and cook for another 4 mins, then turn again. Microwave for 4 mins, then take them out and turn the potatoes over – careful, they will be hot.
